Sample Recipes

 
 

Simple Millet Grain Recipe

1 C millet
3 C water or beef broth
1 t sea salt
1 T ghee (per bowl)

1. Soak grain for a minimum of 8 hours (24 hours is better)
2. Rinse grain several minutes in a strainer
3. Place water or broth and salt in pot and bring to a boil
4. Add grain and reduce heat
5. Simmer until water is absorbed (about 20 - 25 minutes)
6. Optional: Cover to let form into a sort of ‘bread’
7. Mix in ghee before serving as grain OR cut into ‘slices’ and spread with ghee

 
 

Green Beans

1 bunch of green beans
2 T macadamia nut oil
1/4 t sea salt

1. Cut ends off of green beans after washing
2. Put in boiling water for 5 minutes
3. Drain and dry
4. Drizzle with macadamia nut oil and sprinkle with sea salt
5. Serve warm or cold

 
 

Jicama Stix

1 large jicama

1. Cut jicama in rounds and peel off skin (be careful!)
2. Cut into shapes, matchsticks or “French fries”
3. Enjoy fresh and crunchy!

Optional:  sprinkle with sea salt

 
 

Coconut Frozen Treat

Per stainless steel “licking” spoon (regular ol’ soup spoon):
1 T coconut oil
1/4 t xylitol

1. Mix coconut oil and xylitol and put on spoons
2. Put spoons with mixture in freezer to harden on wax paper
3. Serve on the licking spoon and enjoy!

 
 

Turkey Skewers 

2 turkey tenders
1 zucchini
1 yellow squash
1/2 cucumber
1/2 medium jicama
1 T coconut oil
sea salt

1. Coat glass baking dish and tenders (just a little) with coconut oil, and sprinkle with sea salt
2. Bake at 350 degrees for about 25 minutes
3. Cube the turkey, zucchini, yellow squash, cucumber, and jicama
4. Sprinkle vegetables with sea salt or xylitol, depending on your child’s taste (do they like salty or really sweet?)
5. Put everything on the skewer and enjoy!

 
 

Beef Hot Dogs (Applegate brand) with Side Veggies

1. Cut up hot dogs into bite sized pieces (amounts are according to  your child’s appetite)
2. Sprinkle with sea salt
3. Serve with a side salad of baked, sautéed or fresh broccoli and  daikon radish
